These peach smoothie recipes are a little different from most of my other smoothies. Made with coconut meat and water. Absolutely delicious, creamy and hydrating on a hot summer day.
Ingredients
2 peaches (pitted) meat from about 1 young coconut (about 1/2 cup) 2 cups coconut water ice cubes (optional)
Directions
Pit the peaches.
Open a coconut with a cleaver and pour the water in the blender jar. Then scoop out the white meat with a spoon.
Put all ingredients in the blender and blend well.
Tips
You may add a little more water if it's too thick.
If you can't find fresh young coconut meat and water, you can replace the coconut with 2,5 cups almond milk.
Replace the peach with pear, mango or apricots for delicious variations.
You can use frozen peaches in stead of fresh ones.
