Tomato, Celery, Cucumber Juice
This is a great summer juice. Very refreshing and full of minerals. I often drink this juice, or a variation of it, as my first morning drink and find it a fantastic way to start a day.
1 fennel - medium bulb
1/2 cucumber
1/2 lemon, peeled
ginger (about 1/3 inch)
1 apple (beet or carrot)
1 handful of fresh herbs, such as cilantro, parsley or basil
1 or 2 tomatoes (optional)
It's easiest if you first peel the lemon and cucumber (optional). Then, cut the fennel in quarts. Put all ingredients in the juicer starting with the lemon.
You may alter the quantities of the vegetable & fruits based on their size and the kind of juicer you're using. A good juicer may extract more lemon or ginger than others. So you may want to start with half the quantity listed above first and taste before running the remainder through the juicer.
The juice is a great basis for other vegetable juices. You may add carrots, beets, greens, (wild) grasses, apples and tomatoes. The taste is delicious and mild. I like it without the apple, but my mother and neighbor (for whom I prepare this juice often) prefer it with a few beets, apples or carrots. If you don't like to drink the juice of sweet fruits, you may also add a few leafs of the sweet herb stevia or add some stevia drops)
Juices are often even more delicious if you run the liquid through a strainer. You will take out the fibers and a clean juice remains.
Drink the Juice immediately, to get all the vitamins and minerals. They will disappear quickly after the juice is ready.
